Hong Kong talent shines at top F&B contests

Hong Kong's food and beverage talent bagged a slew of awards at big competitions recently.
The Hong Kong Culinary Team, comprising graduates of the Vocational Training Council, won the top award in the group competition category at the Chinese Cuisine World Championship. Fifteen countries and regions contested in this event, dubbed the Chinese Culinary Olympics.
The Hong Kong team themed the six-course menu on a fishing village, giving traditional dishes a modern twist.
Their Fishing Village Romance starter included the Fishing Village Trio comprising Smoked Abalone with Caviar, Scallop Pear Deluxe and Watermelon Crabmeat Terrine. This was followed by Double-boiled Soup with Sea Conch, Matsutake Mushroom, Fish Tripe and Chicken. Then came Stuffed Sea Cucumber with Prawn, XO Sauce Grouper on Oriental Pearls, plus Wagyu Beef Wild Mushrooms Gift Wrap with Eggplant Supreme. Stir-fried Hong Kong Style Sticky Rice followed. The meal was washed down with Tangerine Pu-erh Tea. Desserts, in the form of Eggwhite Almond Sweet Soup, Mango Sago Pudding with Pomelo and Coconut Sweetheart, provided the perfect ending to a winning banquet.
The judges were unanimous: Hong Kong's spread was the best.
Meanwhile, Hong Kong chocolatier Roger Fok was among the top 10 Super Finalists at the World Chocolate Masters, held in Paris in October.
And Sommelier Wallace Lo did Hong Kong proud when he became first runner-up in the Best Sommelier of Asia-Oceania 2015 event held in November.
